When I make breakfast at home, it's generally either oatmeal, often with bacon or sausage links, or scrapple and eggs, often with potatoes. This morning I tried something new. I put fried scrapple on my oatmeal -- and it was delicious! Definitely a keeper.
I'll need to make a new batch of scrapple later this week. The current batch, half lamb, is so good I may do it again.
The quality control of my scrapple has improved since using a package of gelatin in the recipe. Solves the earlier unstable texture issue.
Feels great to be caught up with student work this early. Still undecided on the afternoon. Maybe even go for a ride with Sketch if I choose not to work.
