Damn, I love my easy scrapple recipe! Just made a fresh batch and for the heck of it added some ground lamb to the country sausage. I've done this before. Also have added buffalo. Always comes out good. I have pretty good quality control these days, thanks to the single package of gelatin that keeps it all together. Learned this from the oyster scrapple recipe. Which, by the by, I won't be making all that often. Not that it's bad, it's just very different and not something I'd want to eat often, like my basic scrapple, which I could eat for every meal. But don't. A minor gesture toward my health. You walk that balance between yum! and trying to stay alive a bit longer. I usually chat in favor of Yum! I choose quality of life over quantity every time. Which philosopher said that a life without scrapple is not worth living?
